Beetroot burger

The search for the perfect burger continues…

 

We like the idea of Beetroot. It's really tasty for a start and healthy and locally available.

And it gives that reddish colour - so the burgers look more like their meat counterparts (which is sometimes a good thing if you're selling to hungry non-veggies).

 

They can be too red though and if you use too much the flavour can get overpowering.

 

This version of the burger uses finely chopped mushrooms to get a nice savoury taste, and the beetroot for texture, a deep earthy flavour and a good red colour.

 

With some crushed walnuts, to add an additional nutty flavour and boost the nutritional value, it tasted amazing in a (non-brioche) bun with pickled gherkin, all the trimmings and sauces.

 

We're not there yet though!

The quest continues (cue 'Raiders of the Lost Ark' music).

We thought it was just a little bit on the dry side so definitely needs some further tinkering.

 

Great promising start though.

The burger journey continues and we will keep you posted along the way.
